Shopping around the World:Pumpkin


Today we join Da Phenny who is hosting Shopping around the world for Bacon the Pig


 Recipe below.  I had all the ingredients on hand except the Libby's Pumpkin which
was $2.49 USD at Harris Teeter Grocery store
Very economical treat.

Steps #1-2 are self explanatory no photos

2 cups of water in the bottom of a crock pot large enough for a loaf pan to fit


 Step #6
Paper towels covering the crock pot.
Make sure paper towels are trapped around the lid
so they don't slip.

The unveiling...
After 3 hours of cooking and 30 minute of sitting in the crock pot,
I took the lid off and remove the paper towels...this is what I saw


I let it cool for about 30  minutes on the counter then turned it out onto a plate
Verdict: It is delicious!!



Hints:  
After you take the loaf pan out of the crock pot let it cool about 30 minutes before turning out.
I used 1/4 cup of Truvia for baking in lieu of 1/2 cup white sugar. Either sugar or Truvia work.

NO ABSOLUTELY NO PEEPING AT THE PUMPKIN BREAD WHILE IT IS COOKING

  2. that is super fantabulous! do you think that maybe some pumpkin seeds can be a nice addition? or would it ruin the bread? the mama has a new obect of desire now... a crock pot... think my dad will be surprised... it's the furst time she will ask for a kitchen thingy...hahahahaha

  14. I'm a big fan of pumpkin - though I don't eat much of it outside of Thanksgiving. This bread looks yummy ... and I DO have a crock pot! Err ... one of those wedding gifts I got years ago that's never been used. WIN/WIN with this recipe!
