We were especially drawn to the recipes using fresh cranberries.
In all my years of cooking, I have NEVER made anything with fresh cranberries.
Honestly, I don't recall seeing fresh cranberries in the grocery stores until
20+ years ago. I just never thought cooking with them until

My better half (aka B) and I made Cranberry-Apple Crisp.
He is an expert at peeling and slicing. I'm kinda haphazard at both.

1/2 cup unsalted butter (cubed and placed in freezer)
(I had salted so I used it)*
1 pound Honeycrisp apples (I'm sure your favorite apple would be fine)
they should be cored and peeled
1 pound fresh cranberries
1/4 cup water
1/2 cup sugar (I used just a wee bit less apples were sweet)
1/2 cup light brown sugar, firmly packed
1 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon salt* (I used salted butter so did not add salt)
3/4 cup all purpose flour
1 cup chopped pecans (we had walnuts so I used them)
Directions
Preheat oven to 350 degree F, grease a 8 1/2" x 12" casserole dish
Cut apples into quarters and slice into bite size cubes. Place apples and cranberries
In a food processor, combine the sugars, nutmeg, cinnamon, salt and flour.
Pulse until combined.
Remove butter cubes from freezer and add to flour mixture.
Pulse until flour mixture resembles pea size crumbles.

Cover Dish with foil bake for 30 minutes covered,
Cool before serving.
I might also ADD I wish you could fully enjoy this with your sense of smell too.

Hmmm, you have me wondering if fresh cranberries are available in Aberdeen. The dish looks totally yummy. My childhood home had twelve apples trees (plus a couple of pears trees and a peach tree whose fruit never ever ripened) and so I was trained as a child in the art of fast and efficient peeling and coring of apples!

that looks so tasty... the mama drools on her keyboard LOL our regional magazines talk only about boring things like moneeh wasting and such stuff... the only food inside is the pie in the sky they mentioned ;O)

Fruit crisp recipes are a big favorite with me - I love cranberries and apples together but really ANY fruit in this recipe would be delightful! Thanks for reminding me of the joy of "Fruit Crisp" desserts!!

ReplyDeleteHahaha, I thought you had him peeling the cranberries!!! CH will eat no cranberry unless it comes out of the can with a plop in jellied form!! I love your pictures and how fun this was a joint effort. It looks delicious. We will hop in Olive and be there as soon as possible!
ReplyDeleteI made a pie that had a topping similar to that a couple of weeks ago. I used my japanese persimmons instead of apples in the recipe. It was really delicious. The Redneck Man raved and raved about it.

ReplyDeleteYUMMMM. I had never cooked them either, until last year. I read the amount of sugar in the canned which is what I have always loved, and cooked a bag of cranberries with sweet n low and water.. they were good but not as good as canned, this recipe sounds wonderful but I can't eat sugar. last week I bought the cranberries and found a recipe that said use honey and apple juice to cook them and add applesauce for sweetner. of course I found it and did not have juice or apple sauce. but I did have apples. I diced one apple put it in a cup of water and boiled it for 2 or 3 minutes, then added the cranberries and sweet n low and it came out well. bob likes it to.
ReplyDeleteThat looks very yummy! Thanks for the recipe. Here's our traditional cranberry relish recipe. It's super simple. You just have to make sure you prepare it a day ahead of time.

1 bag of fresh cranberries
1 whole unpeeled orange
1 cup sugar
Grind it all up together in a food processor. Place into a covered bowl and put in the fridge overnight.

I've never made anything from fresh cranberries either. My brother makes homemade cranberry sauce every Thanksgiving and swears it is sooooo much better than the canned type. I think your recipe sounds delicious.

ReplyDeletethat looks delicious!! I make homemade cranberry sauce every Thanksgiving and this year it came out extra good! It has cranberries, sugar, canned mandarin oranges, cinnamon sticks and a WHOLE bottle of wine (because we always at least quadruple the recipe), it is soooooooo good!!!!

I wish I had seen this post before I went shopping today. I’m supposed to make apple crisp for Thanksgiving dinner tomorrow and I would have made this for sure! But I didn’t buy any cranberries. So we’ll have to settle for plain ol’ apple crisp. ~Island Cat Mom

I adore cranberries so that sounds absolutely delicious! I wish that I could bake but it makes my back hurt so badly that I don't do it anymore :( But I can dream!!! Happy Thanksgiving!
