In purrsuit of flavors: One pot meals

Crock pot chicken vegetable Soup 

(nothing fancy just Yummy)
2 cups chopped chicken (cooked or raw) I cooked it first
2 tablespoons butter
3/4 cup chopped onion
1 cup chopped celery
1 tablespoon minced garlic
7 cups (4 cans) chicken broth (we use low sodium)
2 chicken bouillon cubes
1/2 teaspoon thyme
1 teaspoon oregano
1/2 teaspoon pepper
1 cup diced carrots
1 (15 1/4 oz) can sweet corn
Optional:  add 3/4 cup instant rice or 1 cup egg noodles for heartier soup

Directions:  Put all the ingredients in crock pot, cook on high for 6 to 8 hours

  7. yum but no oregano for me.. mother used to boil a whole chicken until it fell off the bone, remove the bones and add these veggies and a few noodles.

  8. Yummy. I've had two soups today and pasta. I'm having a great time eating my way through this morning. No calories this way either.

  12. That sounds like a great recipe for chicken soup. Mom makes hers from scratch in a regular pot with a whole chicken, bones and skin - yummers. But she too loves all things crockpot.

  14. Mmmmm, that sure sounds delish! Dad says quinoa would be an excellent addition in place of rice or noodles. Whenever mom does veggie stir fry she uses quinoa instead of rice. What a fabulous meal for some of these colder days, no? Thanks for sharing.
